So I stopped doing the foundry thing, temporary or permanent I don't know (well I'm still working via phone and email, consulting). I can't afford to go to the Culinary Institute of America (CIA) or the Art Institute of Atlanta but I did enroll in the local tech school's Culinary Arts program.
This blog is about my trials in school, cooking at home and food in general. I may digress occasionally but hope to stick mainly to the topic.
Long term I have a plan to publish my own cookbook. In the mean time, I have been collecting and crafting recipes of dishes that I made and were successful, i.e. worth eating again.
A very choice few of my recipes are my own creation but the vast majority I get from published cookbooks. But I firmly believe that once you make a dish yourself, it becomes yours. I have tweaked every recipe I have ever made, adding things, deleting things, modifying things or clarifying things.
As I present a few throughout here, feel free to borrow them as I have from others and make them your own. But if you can, please provide feedback (all feedback positive or negative is good) if you make the dish. Thanks.
