Your Own...

...Personal...
...Jesus Eggplant...

Admit it, you LOVED that Depeche Mode song, but hate that you can never get it out of your head.

Here is my Listia de Gandia eggplant in the Topsy Turvy Planter. This really is a great way to grow eggplants. Stupid easy to grow this way. But, I was surprised it took about 4 1/2 months to get this small harvest.



And here are my beautiful little ones. Now I just have to decide what I am going to cook with them.

RATATOUILLE!!! Can there be any other choice? Seriously. Well, eggplant parmagian is good too, but why hide the flavor of your precious jewellike beauties? Let them shine in a dish that celebrates the flavor of each component! Just my opinion...and you didn't really ask...but...=)

I'm intrigued by the recipes Escoffier has for eggplant. He deep fried eggplant halves and then prepared them similar to potato skins or twice baked potatoes. These are the perfect size for that. I might have to give it a go, though I really dislike deep frying at home.

That could be really good too-like an eggplant casserole in a crunchy veggie shell. Sounds really good actually!
