Curry Chicken Broccoli Casserole

I made this dish for dinner tonight. This was one of my favorite dishes growing up, one of the few ways my Mom could get me to eat broccoli as a kid. Hey its got meat, rice, vegetable. Its almost a complete well rounded meal!

I make a similar casserole with leftover chicken, it goes a little something like this:
2 cups cooked shredded chicken
1 can amy's organic semi condensed cream of mushroom soup( I have to avoid msg and its secret identities as it triggers migraines in my noggin)
1 bag frozen broccoli florets, thawed
1 1/2 cups seasoned italian bread crumbs
layer in 9x9 baking dish and bake at 350 degrees about 20 minutes til warmed through.
The 4 of us usually eat this up pretty quick.
Next time I'll try your curry and rice version and cut back the bread crumbs. I'll leave out the mayo-I know I know I should try it and I do love mayo on sandwiches, especially bologna-but I am the only one in the house so maybe I'll just add in that extra can of soup too.
And you're only 2 hrs away? That's not too far away at all.
My mom is an independent steel detailer in So. Florida and says the metal side is starting to pick up a little, maybe you'll see some of that too though you and she are at opposite ends of that spectrum.

I don't like mayo but will cook with it where called for. Growing up we ONLY ate Miracle Whip. Still do. And we called it mayo even though it isn't. Still do. So I would bet that if my Mom wrote mayo in a recipe, she used Miracle Whip.

You'll need something to dilute the soup a little with. If no one will let you use mayo, then I would suggest plain yogurt, sour cream or milk, in that order of preference. Yogurt would go very well with the curry.

Bummer on the migraines. I never worry about MSG, but I don't suffer any ill affects from it. I think a lot of the fear over MSG was aver hyped, but the migraine connection is very, very, very legit. I get a form of migraines but it is painless. Affects my vision though. Not sure what causes it but haven't had any attacks in a few years.
